All-In-One Dinner: Turkey, Spinach and Rice Meatloaf

WANT AN ALL-IN-ONE DINNER? 

Try my Turkey, Spinach and Rice Meatloaf! As one of my goals this year is to eat a little healthier when I can, I’m trying to eat less red meat (which I do love BTW), more poultry and fish and lots more vegetables. And in trying to make some of my recipes a little simpler but still just as tasty as ever, this one loaf dinner is great for any night of the week!

MAKING MEATLOAF A LITTLE HEALTHIER AND EASIER TO MAKE! 

Substituting ground turkey for beef, and using Uncle Ben’s Ready Rice (which is FANTASTIC) instead of bread crumbs, and frozen chopped spinach (I know, it’s frozen but once in a while, it just OK), you can have a delicious one pan meal!

Now, you don’t have to saute the onions, but it does soften the onion flavor in the meatloaf. But after that, you are basically putting all the ingredients together in in a bowl and putting the mixture in a loaf pan!

 But the piece de resistance is the sweet and tangy topping of ketchup, brown sugar and a little melted butter. Yes, the butter is needed to help keep the turkey moist and add a nice glazy look to the top of the meatloaf!

So I hope you like this recipe, and I’ll keep you posted on some variations that I already have in mind for it, like adding shredded cheese (OK, maybe not as healthy), or some spices like curry or smoked paprika! The sky’s the limit with my All-In-One Turkey, Spinach and Rice Meatloaf!

All-in-One Turkey, Spinach and RIce Meatloaf Loaf DInner

Equipment

  • 1 Large Mixing Bowl
  • 2 Small Mixing Bowls
  • 1 Large Stove Top Sauté Pan
  • 1 Oven Safe Loaf Pan

Ingredients

  • 2 pounds ground turkey
  • 1 packet Uncle Ben's Ready Rice, cooked (8.5 oz) I love Basmati, but you can use any flavor to compliment the ground turkey.
  • 10 ounces frozen chopped spinach, thawed
  • ¾ cup chopped onions
  • 1 tbsp vegetable or canola oil
  • 2 eggs
  • ½ cup milk
  • 2 tbsp fresh lemon juice
  • 2 tsp basil paste You can substitute 1 tsp dried basil or 1 tbsp fresh basil.
  • ¾ cup ketchup
  • ½ cup brown sugar
  • 1 tbsp melted butter
  • 2 tsp Kosher salt
  • 1 tsp black pepper

Instructions

  • Preheat oven to 350°.
  • Saute onions and oil in fring pan on low - medium heat until softened, about 5 minutes or so.
  • Thaw spinach and press out most of the water.
  • Cook Unlce Ben's Rice according to directions.
  • Beat eggs, milk, salt, pepper, lemon juice and basil in a small mixing bowl.
  • In a large mixing bowl, add ground turkey, egg mixture, spinach, and rice.
  • Gently mix all ingredients until well combined.
  • Add turkey mixture to loaf pan.
  • In a separate bowl, mix ketchup, brown sugar and melted butter until well combined. Spread on top of meatloaf.
  • Cook meatloaf for 45 - 50 minutes, checking to make sure center of the loaf reaches temperature of 165°.
  • Serve with a side salad or fruit!
