BAKED SALMON VINAIGRETTE AND GREEN BEANS IN UNDER 30 MINUTES!

How easy is it to just whisk up a quick marinade and pop a piece of salmon in the oven? REALLY EASY!  All that’s needed is about a pound of salmon filet, and the following ingredients: oil, rice vinegar, honey, Dijon mustard, salt and pepper! Add some diced scallions on top and bake for about 20 or so minutes, and your main protein for dinner is done!

I was making this for a big crowd, so that’s why there’s a lot of salmon in my pan!

GREEN BEANS IN THE MICROWAVE?

You bet! On a weeknight or when I have a large dinner party, I can pop a microwaveable package (or many) of fresh green beans in the microwave and in 3-5 minutes, they are done PERFECTLY! Just toss with my Blended Oil Seasoning and a tab of butter, and they are absolutely delicious! 

Cutting corners can actually be a GREAT thing! There are times when I really like to cook something special and have some recipes that take a little more time, but not always does it have to be that way! If I can find a quicker and simpler way to prepare some foods, I’m game and I hope you are too! Gotta run! Another crazy day today!

Baked Salmon Vinaigrette with Green Beans

My Baked Salmon dinner is so easy and delicious and takes only 30 minutes to make! It's also a healthy no-card dinner that is weight friendly and nutritious!

Equipment

  • 1 8" x 8" glass dish or small cookie sheet

Ingredients

Baked Salmon VInaigrette

  • 1 pound salmon
  • 2 tbsp avocado or olive oil
  • 1 tbsp honey
  • 1 tbsp rice wine vinegar You can substitute champagne, or white balsamic vinegar
  • 1 tsp Dijon mustard
  • 1 tsp Kosher salt
  • ½ tsp black pepper
  • ½ cup scallions or leeks, diced

Microwavable Green Beans

  • 2 cups fresh green beans, preferably in a microwavable packet
  • 1 tbsp Madeline's Blended Oil Seasoning You can substitute 1 tbsp olive oil, ¼ tsp garlic powder, ¼ tsp onion powder, ¼ tsp Kosher salt and ⅛ tsp black pepper.
  • 1 tsp butter

Instructions

Baked Salmon Vinaigrette

  • Preheat oven to 400°.
  • Place salmon in glass dish or cookie sheet.
  • Whisk together oil, vinegar, mustard, honey, salt and pepper.
  • Pour vinaigrette over salmon.
  • Dice leeks and sprinkle over salmon.
  • Bake for 20 minutes, and check for level of doneness based on your preference. I like my salmon a little medium - well, and not fully cooked.

Green Beans

  • Microwave green beans according to instructions.
  • Toss with Madeline's Blended Oil Seasoning and butter.
