Ice Cream Sandwich Cake Made Simple and “CENTS”able!

WANT AN EASY DESSERT IN UNDER 30 MINUTES AND NO NEED TO BAKE? 

In my usual “Don’t Be Silly” style, I wanted to have a birthday dinner for my daughter-in-law and make one of her favorite dishes, my Cajun Shrimp Fettuccini! I also didn’t have a lot of time to spend on making her birthday cake, so I thought I’d just buy an Ice Cream Cake at the Grocery store. Yes, this is so unlike me not to make a cake by scratch, but I have to remind myself that everything doesn’t have to be made from scratch! Since I chose to focus on the main course this time, I felt dessert could be easy and still delicious!

So when I went to the freezer section at the grocery store to look for an ice cream cake, I only saw a couple left, and to be honest, they looked a little freezer burnt! And when I saw the price…..$31.98, I almost fell over! I wasn’t going to spend that kind of money for a less than desirable cake! So I had to put my creative and frugal hat on, and saw ice cream sandwiches from Green’s in the freezer. Hmmm…I remember my niece, Kristen, make an Ice Cream Sandwich Cake awhile back and it was delish, but I forgot all the specific ingredients. I decided to improvise.

5 INGREDIENTS ARE ALL YOU NEED FOR MY ICE CREAM SANDWICH CAKE!

Just begin by laying out Ice Cream Sandwiches on a 9′ x 13″ dish or pan, spreading out some caramel sauce, then some whipped cream, another layer of ice cream sandwiches, then whipped topping, and sprinkle with graham cracker crumbs!

Place the Ice Cream Sandwich Cake in the freezer for about 4 hours or overnight. When you pull it out to serve, sprinkle some mini chocolate chips on top for a little garnish! Then, using a large spatula, serve your salivating guests as quickly as possible! They won’t want to wait!

Equipment

  • 1 9" x 13" glass dish or aluminum pan

Ingredients

  • 20 ice cream sandwiches I used 2 boxes of Green's Ice Cream Sandwiches.
  • 16 ounces whipped topping I used store bought.
  • 1 ½ cups caramel sauce or dip I used Marzetti caramel dip.
  • 1 cup graham cracker crumbs
  • 1 cup mini chocolate chips Feel free to substitute any crushed cookies or candy you like!

Instructions

  • Layer ice cream sandwiches on the bottom of the dish, cutting any to size in order to fit.
  • If your caramel sauce / dip is not easily spreadable, microwave the caramel dip to soften (15 - 30 seconds).
  • Spread the caramel dip / sauce on the ice cream sandwich layer, covering the sandwiches.
  • Spread ½ of the whipped topping over the caramel sauce, covering evenly.
  • Repeat the layering with the ice cream sandwiches then spread the whipped topping.
  • Sprinkle the graham cracker crumbs on top.
  • Freeze the Ice Cream Sandwich Cake for 4 hours or overnight. I gently cover it with plastic wrap after about 30 minutes.
  • Right before serving, sprinkle with mini chocolate chips or a garnish of your choice, like crushed spiced wafers, butterscotch crunch, or any crushed candy of your choice!
