Sweet Potato Biscuits with Honey Herbed Butter

MAKING BISCUITS SWEET WITH MORE THAN SUGAR!

Thanks to my friend, Joanne, I made the best biscuits for Easter dinner! Joanne found this Best Sweet Potato Biscuits recipe from momontimeout.com, and made them while we were down the Jersey shore a week before Easter! Boy were they good! And the best part was, the recipe calls for melted butter and the batter is so easy to roll out! And they still come out flaky and sweet!

SIMPLE INGREDIENTS MAKE A DELICIOUS AND DIFFERENT BISCUIT

Who would have thought to put sweet potatoes in a biscuit batter? They come out with this beautiful orange color, and when you bite into them, you know there’s a sweeter taste than traditional biscuits, and the texture is just a little softer, too! Ingredients are simple with flour, melted butter, baking powder and soda, a little sugar (I added some honey, too), buttermilk, and mashed sweet potatoes. I bake my sweet potatoes by washing them and patting them dry, then rubbing them with my blended oil seasoning (or just a little olive oil, kosher salt and black pepper), and putting them directly on the oven rack, baking at 400° for one hour. They come caramelized and so sweet, tasting just like candy!

Once all your ingredients are mixed together, you just turn the dough onto a floured board, and the dough rolls out so easily! At about 3/4 – 1 inch thick, just use a biscuit cutter or glass from your cabinet to cut out the biscuits! And I made a honey, herbed butter to go with it, and it was a hit!

A DEFINITE MAKE AGAIN BISCUIT!

So when you’re looking for a different spin on traditional biscuits, this is your answer! I served them in a glass cookie jar, and they looked fantastic on my Easter buffet table! I’m definitely going to serve these on my Thanksgiving dinner buffet!

  • 1 Large Board to Roll Out Biscuits

Ingredients

Sweet Potato Biscuits

  • 1 ½ cups baked sweet potatoes I bake them whole in the oven on 400° for 1 hour and remove the skin when they are slightly cooled.
  • 6 tbsp butter, melted
  • 1 cup buttermilk
  • 3 ¼ cups flour
  • 5 tsp baking powder
  • ¼ tsp baking soda
  • 1 tsp salt
  • 2 tbsp sugar
  • 1 tbsp honey

Honey Herbed Butter

  • ¼ cup butter, softened
  • 1 tsp honey
  • 1 tsp fresh parsley or thyme, chopped fine

Instructions

Sweet Potato Biscuits

  • Preheat oven to 400°F and line a baking sheet with parchment paper and set aside.
  • In a large bowl, combine mashes sweet potatoes, melted butter, buttermilk and honey, and mix to combine.
  • Add flour, baking soda, baking powder, sugar and salt. Stir until just combined,.
  • Lightly flour surface or board and turn out dough onto the surface. Sprinkle some flour on the top of the dough as well.
  • Knead dough about 10 times, sprinkling flour if needed to keep the dough from sticking to the surface.
  • Roll out dough to ¾ - 1 inch thick and cut out 3-inch round biscuits with a biscuit cutter or rim of glass.
  • Place onto parchment lined cookie sheet and bake for 15 - 20 minutes until golden brown.
  • Serve warm with honey herbed butter.

Honey Herbed Butter

  • Mix softened butter, honey and herbs until well combined. Spread onto warm biscuits.
