I think I’ve got your recipe! I’ve been into ground chicken these days, and loving trying some new recipes for you! I always love a stir fry, and using what’s in my fridge and pantry to make it!

And any chance I get to use colorful bell peppers, I’m in! And another favorite of mine is a pack of fresh green beans all ready to microwave and can be ready in minutes! Without any fuss, too!

Trying something different other than rice, I picked up a pack of Pho Noodles at the grocery store! They are SO EASY to make! I just boiled water and immersed the noodles in the water so they softened in time for when my stir fry was done!

And I did cut some corners by using a store bought teriyaki sauce that has a few extra ingredients to make it a little thicker, but you can use a plain simple teriyaki sauce.

Teriyaki Ground Chicken Vegetable Pho Noodle Stir-Fry

Whether you use ground chicken or cut up chicken breast, you will love this chicken Vegetable Pho Noodle Stir-Fry all done in one pan! You can get creative and use any vegetables in your fridge! I chose green beans, bell peppers, and onions!

  • 1 Large Stove Top Sauté Pan
  • 1 Large Mixing Bowl


  • 2 pounds ground chicken You can substitute chicken breast cut into 1 inch pieces
  • 3 tbsp peanut oil
  • 4 cloves garlic, minced
  • 2 tsp Kosher salt
  • 1 tsp black pepper
  • 2 large bell peppers I used green and orange
  • ½ large onion, sliced
  • ½ cup scallions, diced (reserve some for garnish)
  • 1 cup green beans, cooked el dente
  • ½ tsp sesame oil
  • ¾ cup teriyaki sauce I used Veri Veri Teriyaki Marinade and Sauce
  • 1 juice of one lime
  • 1 tbsp honey
  • cup cornstarch
  • ¼ cup water
  • 1 cup peanuts
  • 1 pound Pho noodles (cook according to directions) Any brand


  • In a large stovetop sauté pan, heat peanut oil and garlic to low - medium for 5 minutes.
  • Add ground chicken, salt and pepper and saute until cooked.
  • Keeping the pan on low - medium heat, scoop out the chicken with a slated spoon into a large bowl, leaving the juice in the pan.
  • Add sliced peppers, onions and scallions to the pan, and sauté until softened, about 5-7 minutes.
  • In a separate small bowl, add Teriyaki sauce, sesame oil, honey, and lime juice and whisk until combined. Set aside.
  • Add cooked beans and stir until well combined. Cover and let simmer for about 5 - 8 minutes.
  • Meanwhile, prepare Pho Noodles according to directions.
  • Add chicken back into the pan and stir until combined.
  • Pour Teriyaki sauce into chicken and vegetable mixture.
  • Stir until well combined and heated, about 3 minutes.
  • In a small bowl, mix water and cornstarch together until cornstarch is dissolved.
  • Add into chicken and vegetable mixture, raise heat to medium - high, and stir until sauce thickens.
  • Plate with Pho noodles, chicken and vegetables, and garnish with peanuts and scallions.
